Nose
The nose is minerally and soft, with blanched almonds, smoked grapefruit rind, and crisp garden herbs.
Taste
The flavor is high toned with bright and mineral driven acidity, smoked sea salt, brown sugar, and fresh verdolagas. The texture is buttery and fills the mouth for an overall robust effect. The finish is soft and persistent with citrus zest and a hint of cream.
Method/Background
Produced by local legend Epigmenio, now in his 90’s, with the help of his son Diego and family, this mezcal is made according to traditional and artisanal practices including cooking in an in-ground stone lined pit, tahona crushing, and open air fermentation in wooden tanks. The mash is double distilled in small copper pot stills.
