Nose
Clean and crisp aromas of mineral rich soil, fresh garden herbs, and roasted pineapple are classic.
Taste
Starting off bright with juicy acidity, the flavor starts off full of minerals and herbs. A sweet undertone of baked fruit gently expands on the palate with woodsy undertones of leather and smoke. The creamy clay finish is a signature of mezcal from Minas.
Method/Background
Agaves are cooked in an in-ground stone lined pit, crushed by a mix of hand and machine, and open air fermented in 1000 liter wooden vats with natural ambient yeasts for 8-20 days, and double distilled in 100 liter clay stills.
