Method/Background
Agaves are cooked in an in-ground stone lined pit, crushed by a mix of hand and machine, and open air fermented in 1000 liter wooden vats with natural ambient yeasts for 8-20 days, and double distilled in 100 liter clay stills. A third distillation is done with their house made pechuga blend of seasonal fruits, nuts and spices.
