Nose
Clean and earthy with notes of fresh orchard fruits, creme brulee, and bright citrus.
Taste
The flavors are balanced between earthy root vegetables and sweet tropical fruit. Marzipan and dried cherry notes add complexity and depth, merging with the roasted pear pastry richness. The finish is long and creamy.
Method/Background
Agaves are cooked in an in-ground stone lined pit, crushed by a mix of hand and machine, and open air fermented in 1000 liter wooden vats with natural ambient yeasts for 8-20 days, and double distilled in 100 liter clay stills.
