Nose
A healthy dose of fermenting tropical fruit is a bold, and perhaps polarizing, aroma.
Taste
The flavors are bright and full of mouth puckering acidity- very fresh. There are layers of guava, papaya, kiwi, and plantain, all wrapped up with some vegetal funk. The finish brings even more to the party with deep flavors of roasted coffee, velvety chocolate, and clay. This is an interesting and brain-breaking spirit for the adventurous. Method/Background
Agaves are cooked in an in-ground stone lined conical pit; cooked agaves are mechanically milled and the mash is fermented in stainless steel tanks. Distillation is done in a copper pot still, then aged in glass for 60 days.
