Nose
Intoxicating perfume of apple blossom, roasted coffee, and gentle smoke.
Taste
This classic mezcal shows off with layers of floral and fruity notes, complemented by deep roasted notes of cacao, coffee bean, hints of sweet vanilla, and smoky leather peeking through. Red fruit notes are caramelized with peppery spice that leaves the tongue feeling fresh and zesty.
Method/Background
Agaves are cooked in an in-ground stone lined conical pit using black oak wood; cooked agaves are tahona ground and the mash is fermented in above ground wooden tanks with pulque added as a fermentation starter. Distillation is done in a copper pot still, followed by 60 days maturation in glass.
