Nose
Orange blossom and tarragon and refreshing, lifted, and clean.
Taste
Juicy citrus notes mix with fresh garden herbs for a slightly sweet and airy flavor. There is considerable depth, with notes of spice and acidity keeping the subtle yet rich smokiness lifted and bright. Sweet melon and pine round out the finish.
Method/Background
Agaves are cooked in an in-ground stone lined conical pit using black oak wood; cooked agaves are mechanically milled and the mash is fermented in in-ground clay and wooden tanks. Distillation is done in a Filipino style wooden and copper still and matured in glass for 60 days.
