Method/Background
Agaves are cooked in an in-ground stone lined conical pit; cooked agaves are crushed by hand with ax and mallet. Fermentation is done in in-ground wooden and clay tanks. Distillation is done in a wooden and copper still, and then aged in glass for 60 days.
