Nose
Gently nosing this mezcal offers heady aromas of baked pineapple, burnt sugar, and leather.
Taste
The flavors are layered and complex, with the classic roasted pineapple notes mingling with toasted macadamia nuts, a hint of sesame seed, sweet pipe tobacco, and citrus zest. As the sip progresses, notes of coffee and herbs take center stage. After each sip, the palate is left vibrating with roasted, fruity, and nutty flavors.
Method/Background
With a bit of a cult following, the classic flavors of this mezcal are due to an extra long roasting that results in layers of caramelized flavors. This iconic mezcal is produced by cooking agaves in an in-ground pit, crushed, fermented in wooden vats and double distilled in copper pot stills.
