Nose
Roasted citrus notes prevail, with undertones of chocolate, minerals, and clay.
Taste
The flavors are explosive and expressive with ripe tangerine, comal roasted coffee and chocolate, pleasantly spicy red chili, and more citrus zest on the finish. The concentration of flavors is deep, with a velvet texture that stays perfumed with mixed citrus peels. A liquid masterpiece.
Method/Background
This artisanal mezcal is produced from ripe agaves that are cooked in an in-ground pit, hand crushed, open air fermented in wooden tanks, double distilled in small clay stills, and adjusted with spring water.
