Method / Background Notes
- Agave sources: Eight year old espadín agaves.
- Roast: Underground stone lined conical pit fired with oak and pine.
- Crush: Mechanical crusher and horse drawn tahona.
- Fermentation: Wild fermentation in sabino and pine vats.
- Distillation: Twice distilled in copper stills.
