Bacanora Batuq
Rafael Encinas Molina comes from a long line of bacanora producers, and has made bacanoras for a number of labels. Batuq is his own brand, which is produced on the family ranch near San Pedro de la Cuerva, Sonora. Like all legal bacanora, Batuq is produced from agave angustifolia haw. Molina is not a huge fan of smoke, so he uses a hybrid of wood-fired pit roasting and steam roasting to prepare his agaves for fermentation.
