Aguas Mansas
Aguas Mansas was developed by Guillermo Escárcega and is produced in Santiago Matatlan by Maestro Juan Hernandez Santiago. This Oaxacan mezcal is baked in a conical earthen oven, milled by tahona, fermented in wood, and double-distilled in copper alambique (alembic) stills to 45% ABV. The Aguas Mansas line-up includes an espadín, a tobalá, a cuishe, and, most recently, a tepeztate. The NOM for this mezcal brand is O387X. Scroll down for our tasting notes and reviews.
