An autoclave is a sealed metal container used to cook, sterilize, or cure items with steam. In the mezcal world, autoclaves steam agave hearts. These steam ovens are most commonly seen in the tequila industry, where the neutral approach to cooking leads to a lighter spirit. Autoclaves are less common in the mezcal industry because most mezcal makers prefer the flavors that result from roasting agave hearts over wood and stone.
