Nose
A rich eau de vie with bright apple notes. This one veritably jumps out of the glass at you!
Taste
This is clearly an eau de vie – fruity, rich, and powerful. In contrast to the aroma, I don’t taste apple. It’s filled with a vigorous fruit flavor that reminds me of a trou normand. Like a lot of mezcal pechugas, it’s not about pulling out the distinct flavors of the things that went into it but about the entire sensation. Whereas some meat pechugas have an unctuous, almost oil, sensation, this is all fruit with a sparkling mineral tail.
Production Details
- Fruit source: Local Maryland apples for the apple brandy.
- Fermentation: The apple peels are saved when making the base apple brandy spirit, smoked and then added to the fermentation.
- Distillation: Local Maryland pawpaw fruit, persimmons, and black walnuts are added to the second distillation. A Maryland County Ham is hung over the still.
- Bottled at still strength of 53.1%.
Background Notes
Read my profile of this project. It’s a really fun idea that I wish more distillers would take up because eau de vies are amazingly flavorful and the addition of fruits and meats to the distillation only adds complexity. Baltimore Spirits have commissioned an amazing illustration for this bottle that features a Maryland black snake reaching into the fruits in the bottle.
