Spicy-sweet, the aromas are complex and invigorating.
Taste
Immediately warming on the palate, the freshness and spiciness intermingle, like thin slices of just picked jalapeno. Heady floral notes mix with earthy fresh cut grass, creating a dynamic tug of war between flavors. Ripe pineapple sweetness leads to a salted caramel finish.
Method/Background
Emigdio Jarquin uses the regional and unique refrescadera still, which accomplishes 1.5, or almost two full distillations, in just one run of the still, thanks to the extra cooling component. The result is a fresh, pungent, and ultra flavorful mezcal which has placed a spotlight on the Ejutla and Miahuatlan regions. Prior to distillation agaves are cooked in an in-ground earthen pit, tahona crushed and naturally fermented in wooden tanks.
