Nose
Creamy and earthy on the nose, with a touch of spearmint.
Taste
Rich with garden herbs, flavors of mint, oregano, and lemon balm are balanced by rich buttery earthiness. Flavors of caramelized agave and creme brulee show off the ripeness of his material and careful cooking. Refreshing lime zest and limestone is cool on the finish.
Method/Background
Joel Barriga is a cousin of the late Aquilino Garcia Lopez, who he worked with to refine his style. Similar to the palenque in Candelaria Yegole, agaves are cooked in an in-ground earthen pit, naturally fermented in wooden tanks, tahona crushed, and double distilled in small copper pot stills.
