Nose

There is a bit of spice and a touch of smoke, but the star of the show is the corn, fresh and dried flavors are interwoven in the smooth texture. There is plenty of acidity and brightness, with dried citrus peel keeping the flavors fresh and the sips flowing. The finish is floral and earthy.
Method/Background
This signature mezcal of the late Aquilino Garcia Lopez, one of the highest regarded mezcaleros in Oaxaca, is now made by his sons at the family palenque. Local agaves are cooked in an in-ground earthen pit, tahona crushed, and naturally fermented in wooden tanks. Small copper pot stills are used for all distillations. Heirloom corn from their huerta is distilled with the mezcal, pechuga style, and infuses the spirit with its sweet, earthy aroma. It is a classic, often mixed into cocktails, though it is a treat to sip and savor on its own.
