Bozal Cenizo is made with Maguey Cenizo (agave Durangensis) that are cooked in earthen pit ovens, then crushed and mashed by a stone horse-drawn tahona. The agaves are fermented in open-air tanks using only naturally occurring yeasts, and then double distilled.
