Nose
The second you pour it Camaztoz fills the room with a huge bouquet of agricole sugar cane fruit. Spirits made from freshly crushed sugar cane are so distinctive and evocative.
Taste
Camazotz’s flavor is more nuanced than its aroma, against a background full of sugar cane there are touches of wet cardboard and caramel.
Method / Background Notes
Camazotz is pressed by hand or in a mule powered molino, fermented with ambient yeasts, and then distilled in a 300 liter copper alembic pot still. The web site notes that “the liquid is transported by mules 5km up the mountainside ready for collection.”
The name is particularly evocative, Camazotz was a bat god to the Maya, Zapotec, and other pre Hispanic tribes. The classic representations are dramatic enough but contemporary interpretations have melded it to Batman and clearly inspired many illustrators.
