Nose
Clean with the slightest hints of mint and lemon zest. The scent of this Sotol doesn’t prepare you in the least for the flavor.
Taste
There are a bewildering variety of flavors here ranging from carob to roses to a touch of hierba santa. It’s an amazing synthesis.
Method / Background Notes
If you needed further proof that distilling traditions are being created in northern Mexico this is another example in a long series. It’s roasted in an autoclave, crushed with stone, then fermented in stainless steel lined wood tubs before being double distilled in a stainless steel still. This is also an example of the amazing pricing in the Sotol space, at $50 a bottle it’s a steal.
